How to Choose and Store Pine Nuts to Keep Their Freshness and Benefits

Pine nuts are delicate — and easy to spoil. If stored incorrectly, their natural oils oxidize quickly, causing a bitter taste. Here’s how to keep them fresh and full of nutrients.

When buying, check the smell and appearance. Fresh pine nuts have a pleasant forest aroma, are dry to the touch, and free of white coating. If they smell soapy or rancid — they’re already bad.

Whenever possible, buy nuts in their shells — they stay fresh longer. Shelled nuts should be stored in a glass jar with a lid in the refrigerator. At room temperature, they last up to three months; in the freezer — up to a year.

Roast them only before serving: 3–5 minutes on a dry pan enhances flavor without destroying nutrients.

Fun fact: in Siberia, pine nuts were once called “golden currency” — used to pay taxes and make healing cedar oil.
